A quick kale soup

The other night I was trying to figure out what to order or pick up for dinner when I remembered some kale I had in the fridge and decided to whip this up. I had to top this with some crispy proscuitto as I didn't have any ham. It was looking just too vegetarian and healthy! Actually I did use chicken broth - which really made it tasty so I wasn't trying to be vegetarian anyway - if that is your leaning then feel free to use veggie broth or water - just make sure you have a special olive oil for drizzling. Kale, Potato and Fresh Shell Bean Soup - better than take out!
