Last of the Peaches


When the season is ending - you need to go all out! First I made peach ice cream - it was very nice - especially with a little more bourbon poured over the top! But the show stopper was the Almond Peach Galette - I love these kind of free form things - the messier the better! If peaches are over, I would suggest pears next...

Almond Peach Galette serves 6

1 pie crust (I got it from our local bakery - a great cheat!)
4 oz finely ground almond meal
1/4 cup sugar
1 egg yolk
zest of 1 lemon
3 large peaches
dash nutmeg
2 tablespoons sugar
1 tablespoon butter

Roll out the dough into a rough round and place on a baking sheet that is covered in parchment paper. Mix together the almond meal, sugar, egg yolk and zest. Spread it in an 8inch circle in the middle of the crust. Slice the peaches - I happened to peel them first, but they look nice with the skin on if you don't want to bother. Lay them over the almond mixture in a fan like pattern. Fold the dough around so it covers the outer edge of the peaches. Brush the pastry edges with a little water and sprinkle over the sugar - on the peaches and the crust. Grate a little nutmeg over the top and dot with butter. Refrigerate until firm - about 30 min. Bake at 375 degrees for about 40 min or until crust is golden. Let cool a bit then serve with a little cream if you like. Seriously - I'm trying pears this weekend!
