Lovely Vegetable Plate

I'm SO Not a vegetarian - but on occasion - with some really good veggies - it's a perfect meal. I got all these fresh vegetables at the farmer's market and decided to make a meal of it. First I roasted some nice orange beets - it's really simple. Place them in a covered glass baking dish with a little bit of water and roast for about 40 min at 350 degrees - a bit longer if they are large - stick a fork in to test for tenderness. Let cool a bit and slip off the skins (that's why I like the lighter colored beets - they don't stain your fingers) chop coarsely and drizzle with a good balsamic vinegar and olive oil. I served these on top of arugula with some chèvre dolloped on top. Next was my favorite roasted peppers - god these are so sweet! Then for some more green color - Herbed Zucchini-Feta Fritters - they were good, I liked the addition of the feta, but the herbs were a bit much. And finally a quick little warm potato salad. Just boiled potatoes then tossed with a little lemon juice and a big splash of olive oil and some chopped fresh dill. Salt and pepper of course. No meat required!
