Risotto with tomatoes and mozzarella

This was delightful! Had a little smokey flavor from the oven dried tomatoes - but you could use some store bought ones in oil too. Just a basic risotto - leave out the peas and goat cheese from this recipe - and then add in some chopped tomatoes and 1 cubed ball of mozzarella in water - sprinkle of basil would be nice - making it like a caprese salad - but I didn't have any on hand - oh well, next time!
