Torte Wendy - Chocolate!!!


This was another joint effort from my Peruvian Ladies and me! If you like chocolate then this is for you! Not too sweet and oh so good.

Torte Wendy serves 12

3 cups cake flour
2 and 1/2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons salt
1 cup unsweetened cocoa powder
1 and 1/2 cups vegetable oil
2 cups whole milk
2 tablespoons red wine vinegar (boy this was a fun translation - I pulled out half a dozen vinegars before she said ok)
1 teaspoon vanilla
3 eggs
1 and 3/4 cup sugar

Sift together in a big bowl the first 5 dry ingredients. Then whisk in the oil. Mix together the milk, vinegar and vanilla then add to the bowl and whisk until incorporated. Add in an egg at a time, mixing well after each. Then slowly beat in the sugar. Butter and flour (I showed them my Baker's Joy - they were quite impressed! and look how nicely it came out - that I don't guarantee - my pan is super old and well seasoned) a large cake pan with a center round piece - I have no idea what these are called - it's not a bundt as the sides are flat. Bake at 350 degrees for about 40 min - checking to see if it's done with a toothpick. Next - icing - my addition!

Ganache

3/4 cup whipping cream
7 oz bittersweet chocolate chopped
1 teaspoon vanilla
about 1/3 cup toasted almond slices

Melt the chocolate in a microwave safe bowl with the cream. Don't boil - then whisk until it's pretty thick. You want to be able to pour it over, but not totally liquidy. You may need to refrigerate for a few, then whisk again. Oh - add the vanilla. Then pour over completely cooled cake and sprinkle over the almonds. Invite over some chocolate lovers.
