The best soup ever. Period.

This is really my favorite soup - almost a stew as it's so chock full of vegetables that it's thick and satisfying. And how can you resist the name Outlaw Soup! Here it is with the sour cream added. This time I used pork scallopini and parsnips instead of the beef and turnip - still perfection. The best part about it is that since everything is diced up small each bite is filled with different tastes and textures and even though that's the most difficult part about making this - hand dicing all the stuff - it's worth it! AND the second day it's even better!! Bring on the cold weather - I have soups to make! Exclamation mark!

  1. Rebecca, I made this soup Saturday after Thanksgiving. I wasn't diligent about the quarter-inch dice, but it was very delicious nonetheless. I added a little cabbage because I had some. I may have gone a little overboard and used full-fat sour cream. It certainly was rich. I think it was even better after 3 days.
