I love the amazing colors of these rainbow carrots - sometimes if you peel them you lose the hue - not with these! They are purple all the way through. I tossed a few into my Mexican Rice and surprise - more like Mardi Gras Rice! Tasty and colorful. Next time I think I'll try a shredded carrot salad - add a little color in your meals (life).
