Tamale Pie

Oh, I just love a good casserole - and not the campbell's soup kind. But a real honest homemade casserole - and this is one of my favorites -Tamale Pie. The original recipe came from an old Better Homes and Gardens cookbook of my mothers and I've been making it by putting good tamales on top but this time I decided to use up some of my stock pile of cornmeal from Tierra and do the original corn meal mush topping - just as delicious!



The only thing I changed from my other recipe was the topping - here you go.

Corn meal mush (I know sounds so attractive)
3/4 cup cornmeal
1/2 teaspoon salt
2 cups cold water
1 tablespoon butter

Stir cornmeal and salt into water in a pan and cook until thick stirring often. When thickened after about 15 min or so mix in the butter. Lay in strips down the hot casserole and bake.
