Simple French Toast for a rainy day

And let there be rain! Finally! Woke up this morning to the pitter patter of fat rain drops hitting my bedroom windows - which sent Richard running down to put the windows up in his car! The stormy morning inspired me to make comfy french toast with some of my leftover bread. Cannot believe I've never done this yet! I didn't bake this week - I decided to take a little break - but of course I still have some slices in the freezer and I didn't even defrost them - just placed in the egg/milk mixture and it turned out perfectly. I looked up my other recipe for french toast and decided to change the flavor profile a bit. I think this is now my favorite - reminded me of lemony ricotta pancakes as they were fluffy and delicious.

Lemon French Toast serves 2

4 slices of bread (used my homemade, holey county loaf slices straight from the freezer)
2 eggs
2/3 cup whole milk
2 tablespoons cream (you don't have to use, but it was nice ; )
zest of 1/2 a lemon
grating of fresh nutmeg
1/2 teaspoon vanilla
dash of salt
1 teaspoon sugar
couple tablespoons butter for the pan

Whisk together all the ingredients and then in a glass pyrex place the bread slices and cover with egg/milk mixture - let sit a few min on each side turning a couple times. You don't want a soggy mess, just a bit soaked in. Melt the butter in a large pan or griddle and fry each slice until browned on both sides and cooked through. Great on it's own or with a little sprinkle of powdered sugar or maple syrup.
