I woke up this morning CRAVING pancakes - and these were the ticket! Plus I had some fresh blueberries sitting around -can I say I LOVE berry season!! The recipe makes a ton of pancakes but I'm going to try freezing them. Probably won't be as good as a frozen waffle but better than nothing. Adapted from Bette's Diner.
Simple Buttermilk Pancakes serves about 4
2 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, beaten
2 cups buttermilk
1/2 cup milk
1/2 teaspoon vanilla
1/4 cup butter melted
if using - 1 cup fresh blueberries tossed with a teaspoon of flour or frozen ones
Mix in a large bowl the dry ingredients. In a large measuring cup pour in all the wet and whisk together. Add to the dry and stir just until blended, there will be some lumps. Gently fold in the blueberries if you want. Heat a large pan or griddle (I used my electric fry pan) and add a light coat of oil and pour a ladleful in with a little space between them. When bubbles appear flip and cook another couple min or until done. These were fluffy and delicious. Only needed a couple drops of syrup - but even a sprinkling of powdered sugar would do. So wake up and smell the pancakes!
Since it made so many I called my neighbor Bob who's wife is out of town and he got a special delivery this morning. Sharing is the best.
