Glazed Salmon

It's local salmon season here so I've been buying it especially when it's on sale.  I wish I could stock up when that happens but I don't really love frozen fish - oh well - get it while you can.

Salmon BLT
Glazed Salmon serves 4

1 teaspoon brown sugar
1 teaspoon honey
2 teaspoons butter
2 tablespoons dijon mustard
2 tablespoons soy sauce
1 teaspoon sesame oil
1 tablespoon olive oil
2 teaspoons freshly grated ginger
1 salmon filet skin on a bit over a pound

Mix in a bowl all the sauce ingredients and microwave (or melt on the stove) for a min so it all comes together. Place your salmon skin side down on a foil "plate" then pour the sauce on top. Grill in the foil - do not turn - depending on how thick your filet but it took about 20 min over indirect heat. Then you just peel up and the skin stays on the foil and no muss no fuss.

The next day with our leftovers I made a salmon BLT - just starting to get some tomatoes so I thought this was a good way to celebrate. Toasted my bread, a little mayo and I'm in heaven. 2 meals for the price of one!
