Just got back from Jerry Day in John McLaren Park which is just behind our house. Every year now we've been meeting with our neighbors Ruth & Floyd for a picnic to listen to the various bands. Ruth makes fried chicken fingers and I bring the stuff to make them into sandwiches (good sliced bread, tomatoes, lettuce - grown by Ruth, mayo and mustard) John & Rey joined us and brought chocolate chip cookies - the weather turned out hotter than expected and it's always good people watching at this event - lots of original hippies and wanna be's. I also brought my Pesto Potato Salad serves 6
1 1/2 lbs. small red potatoes
1/2 cup homemade pesto or store bought
1/2 cup mayonnaise
1/4 cup sour cream
pine nuts & parmesan to garnish
Boil whole potatoes in salted water about 12-15 min. or until tender. Combine pesto with mayo and sour cream. When potatoes are cool cut into quarters and toss with dressing. Sprinkle with pine nuts & parmesan.
