Okra - let me count the ways.

When we were visiting Kenny, Frances, Lucas and Shep in Georgia, Frances made whole fried okra and it was great - much less work! I decided to try it when we got home and loved it. Make sure you have fresh small pods and toss them with an egg white and then in a shallow plate mix 1 part flour to 2 parts cornmeal and some cajun spices - I use Paul Prudhomme's. Roll the okra in the dry mixture then fry as usual. Sprinkle with a little salt when done and you can eat the whole thing! No waste. No cutting. Love it!
