Simple Meal - lot's of flavor

Green Bean Salad
 I've made this green bean salad before and really liked it - today I topped it with a chopped hard boiled egg and it was delicious - especially since the green beans are so fresh at the farmers market right now.

For our main course I just took what else I had on hand. First I had a great big fresh sweet white onion that I finely sliced and sautéed until it was browned and caramelized in a bit of olive oil. Next I chopped up some sweet green long Italian frying peppers and cooked them with the onions until tender. Then some cut up fresh fingerling potatoes that I had boiled whole until almost cooked through got tossed into the mix along with a couple fresh pork sausages and then flipped a few times until browned and crusty. With some good mustard alongside this was a perfect simple meal.

Post Note: Had just a small bowlful of potatoes left over and was dreaming of a little snack when I got home - but my hubby had already discovered them - didn't even save me a bite! You snooze you lose I guess! Oh well that means I'll have to make more : )

Post Post Note: I had this salad again with a grilled pork tenderloin, some roasted beets and my favorite rice casserole - eat it til it ouches rice!
