I think this might be one of Richard's favorites. It's so simple and broccoli rabe is in season right now so get on it!
Orecchiette with Sausage and Broccoli serves 4
couple tablespoons olive oil
2 italian sausages
clove of garlic
dash of red pepper flakes
handful of broccoli rabe chopped
1/2 pound orecchiette (little ears - isn't that cute)
grated parmesan
In a large saute pan put the oil and squeeze out the sausage into bit sized pieces and fry until browned. Add the garlic and red pepper - you could also use spicy italian sausage and skip the pepper here. Next add the broccoli and toss and cook for about 4 min or until slightly tender - I like mine crunchy. Boil the pasta until tender but not mushy then save a bit of the pasta water by draining the pasta and immediately dumping it in the pan with the sausage and broccoli tossing and cooking for another min or two. I served with a drizzle of peppered olive oil my friend Annette made and a generous grating of parmesan. Simple and delish.
