Dried Tomato Dip
Ingredients
- 4 oz dried tomatoes
- 1 clove garlic
- 6 basil leaves
- 1/3 cup olive oil
- 3 Tablespoons balsamic
Instructions
- Place all ingredients in a small food processor and grind up until chunky paste.
This is an oldie but a goodie - my dear friend Paula used to make this at all her parties - for some reason it's off the menu now but I thought of it the other day when I realized I have TONS of (technically) oven dried tomatoes in my freezer so I decided to make this to go along with my grilled lamb and flatbreads - oh yeah baby- perfect combo. Although it's great with just some simple crackers and cheese... or with some hummus too. I even had my own fresh green garlic - alas no basil yet but hey, at least my tomato supply is going down! Remind me NOT to plant so many this year! LOL
Wanted to share this - little yellow flowers on the hillside behind our house - they have never appeared before - guess all this rain brings some surprises with it!
