Tequila Orange Chicken Fajitas




Tequila Orange Chicken Fajitas

Ingredients

  • 1 whole boneless skinless chicken breast
  • juice of one orange
  • Zest of one lime or lemon
  • 1 teaspoon soy sauce
  • 1 tablespoon tequila
  • 1/2 teaspoon smoked chipotle powder
  • good splash of olive oil
  • 1/2 onion thinly sliced
  • 1 red or orange bell pepper sliced
Takes , serves 2 people.

Instructions

  1. Place juice, zest, soy, tequila, chipotle powder and ½ teaspoon salt in a bowl with your chicken and let marinate overnight in the fridge, or at least a few hours.
  2. Grill the chicken breast until cooked through.
  3. Heat up a sauté pan and put in a splash of olive oil.
  4. Throw in your onions and peppers and cook until soft and browning about 10 min.
  5. Slice the cooked chicken and add to the pan to brown and reheat.
  6. Serve in flour or corn tortillas with topping suggestions below.
Today I kept the toppings simple - some grated cheese (I love the mexican blend one) and some chopped avocado with a drizzle of Sriracha - but if you want to get fancy I would do 2 sauces - mash an avocado with some lemon juice and a couple tablespoons sour cream and a dash of salt and for the other sauce take about a 1/4 cup of mayo and a good tablespoon of Sriracha and mix up. Then drizzle (with a squeeze bottle if you have one) or just drizzle both sauces on top. As you might know - I HATE cilantro - so I wouldn't sprinkle on top - but if you are one of those people that loves that soapy tasting green stuff - go for it!

Post Post Note: If you are worried about the tequila for the kiddos - don't be - it totally cooks out, but if you really don't want to use it - don't - not the end of the fajita world, they will still be delish!
